We are a six-seat counter in Gothenburg, Sweden
devoted to a quiet expression of sushi.

Each seating is a conversation between past and
present, shaped by attention, repetition and change.

The cuisine traces a line through Edomae practice.

From its methods onward,
the work is shaped by technique,
timing, and care.

Ingredients are chosen for their quality and condition,
and handled according to what they require.

Attention is given to how each product arrives,
and to how it develops through preparation.

Decisions are made at the counter.
Cuts are chosen according to texture and fat.
Seasoning is adjusted to the state of the product.
Timing is set by how it responds during handling.

We invite you to immerse yourself fully

We embrace a philosophy that
intertwines tradition with subtle innovation,
creating a dining experience that is both intimate
and profound. This ethos extends beyond our counter,
finding expression in Himitsu, our dedicated tea space
nestled quietly behind the main dining area.

Himitsu offers a seasonal introduction course, guiding
guests through a curated selection of carefully crafted
brews and creations. Afterward, guests are invited to
explore a thoughtfully curated à la carte menu, featuring
a unique range of libations, savory offerings, and sweet
delights, providing the perfect setting for a meaningful
experience, enhanced by stimulating conversation.

Much like our approach to sushi, the offerings at Himitsu
are rooted in a deep respect for tradition and an
appreciation for the nuances of flavor and presentation.
Here, tea is not merely a beverage but a medium through
