Welcome to HOZE
We are a six-seat counter in Gothenburg, Sweden
devoted to a quiet expression of sushi.
Each seating is a conversation between past and
present, shaped by attention, repetition and change.
The cuisine traces a line that begins in the nanban era,
when Japan first came into contact with the
Mediterranean world. From those early exchanges
through the methods of Edomae and onward,
the work follows a thread of preservation, acidity,
fermentation and restraint.
These forms are not imitated—they are reinterpreted.
Nordic seafood, Japanese technique, and
Mediterranean sensibility come together
in a way that is rooted, but in motion, not fusion,
but continuity across distance and time.
The ingredients are chosen with care,
some from the cold waters nearby, others
from longtime producers in Japan.
We invite you to immerse yourself fully
in this quiet dialogue between past and present.

Himitsu offers a seasonal introduction course, guiding

a unique range of libations, savory offerings, and sweet

unfortunately, we do not accept any dietary restrictions containing soy, nor can we accept vegans or vegetarians, the menu is pescaterian friendly. omakase starts at 18:00 (6pm), if not stated otherwise, please be on time.
